Easy and Tasty Blueberry muffins!

I am all about the easy and quick options when it comes to making food! Here is a quick and easy recipe for Blueberry muffins. These are light and fluffy and not too sweet. The sour the Blueberries the better!


Muffins: (Makes about muffins)
1 cup of blueberries (I always put in more than a cup)
1 1/2  cup self raising flour (or plain with 2tsp baking powder)
3/4 cup sugar
1/2 salt
1/3 cup vegetable oil
1 egg
1/3 cup milk

Crumb Topping: (Optional)
1/2 cup sugar
1/3 cup flour
1/4 cup cubed butter
1 1/2 tsp ground cinnamon

Preheat oven to 200 degrees C. Grease muffin tray or use muffin liners.

Combine flour, sugar, salt (and baking powder). Place vege oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in the blueberries.

Fill muffin tray right to the top and sprinkle the crumb topping mixture (But I prefer them without the topping).

Crumb Topping: (Optional)
Using a fork; mix together the sugar, flour, butter and cinnamon until crumb like and sprinkle over the muffins.

Bake for 20 to 25 minutes or until a nice golden brown.

  1. I did these yesterday with little Luca (2yrs) and are yummy! And not as messy as I thought it would be. And really quick... we were done by the time daddy woke up...

    ps: I added a dash of vanilla extract for the extra flavour
